Alfred A. Cofino
Cofino’s journey to acupuncture began long before medical school — in the kitchen, on the field, and through a lifelong curiosity about the mind and body. After earning a Psychology degree from New York University, he explored healing through nutrition, movement, and lifestyle. Today, that path has come full circle to acupuncture, where mind, body, and energy converge for holistic wellness.
Growing up around the game of golf and working as a caddie, he developed an early appreciation for focus, discipline, and the subtle mechanics of the body. Years later, that same attention to detail would shape his approach to healing.
Before studying Chinese medicine, Cofino was a professional chef and the owner of an organic café in Vermont. Working with farmers and preparing seasonal whole foods every day deepened his understanding that true health begins with nourishment and a connection to nature.
This passion for natural wellness eventually led him to pursue advanced training in traditional East Asian medicine, where acupuncture, herbal medicine, and lifestyle practices have supported healing for thousands of years.
Today, through Fairway Acupuncture, Cofino blends his culinary background, medical training, and love of sports medicine to offer thoughtful, personalized care.

Courtney C. Contos
Old-world skills, nourishing traditions, and simple food made with soul. I’m Courtney Contos Cofino—French-trained chef, culinary educator, and wellness coach with 30+ years of experience at the intersection of food, healing, and tradition.
Raised in a family of restaurateurs in Chicago (running around my father’s legendary restaurant Chez Paul), she grew up immersed in the deep culture of real food and hospitality. She earned a degree in Hospitality Management from Kendall College and was honored to complete a culinary internship at Charlie Trotter’s, where she received the Outstanding Internship Award—an experience that shaped her love for excellence, creativity, and craft.
Over the years, taught thousands of cooking classes, developed recipes for celebrities, chefs, magazines, and even Martha Stewart, led seasonal and international cooking classes and culinary tours, and owned Chef Contos Kitchen & Store in Vermont—a beloved cooking school and specialty kitchen store. Her recipes and work have been celebrated by outlets including Food & Wine, Culture Magazine, and the Vermont Cheese Council, and appeared in over 100 live TV cooking segments.
Today, based in Florida and focused on helping people feel grounded, empowered, and nourished through food. Studying herbalism, launched Heritage Kitchen line of salts and infused honey’s with a tea line on the way. The Heritage Chef YouTube is a fun place to check out what’s cooking in my home. Warmly encouraging scratch cooking and deeply nourishing meals at home—rooted in tradition and simplicity—this is her greatest joy. Plus living free among weeds and trees.
